Handmade with care and using age-old techniques, the dough is left to ferment for 72 hours , resulting in a crust that is crisp on the outside and delightfully chewy on the inside.

When it comes to Italian classics, both Tiramisu and Lasagna hold a special place in my heart. Tiramisu, with its delicate layers of coffee-soaked sponge and creamy mascarpone, offers a sweet yet rich indulgence that’s hard to resist. On the other hand, Lasagna, with its layers of hearty Bolognese, creamy béchamel, and perfectly baked sheets of egg pasta, is the ultimate comfort food.

Sourdough Pizza Trancio: square slice Margarita or Pesto and bufala cheese
Sourdough Pizza dough for sale(pre order please)
Arancini(2): arborio rice balls lightly pan fried then air fried. Chicken broth base filling- Mushrooms, onions and garlic coated in breadcrumbs (whisked eggs, flour) comes with a dash of tomato base sauce
Polpette: mince meat balls(parmesan, parsley, egg, garlic) in a tomato base sauce+ bread roll
Beef Brasato: slow cooked meat and veges in red wine gravy $12
Pasta Amatriciana: pancetta(pork), chilli, parmesan sauce and egg base pasta
Lasagna 750gms: traditional egg base pasta with béchamel (milk, butter, flour, nutmeg) and Bolognese sauce( see below)
Minestrone Vegetable, bean soup: in a chicken broth base and parmesan cheese+ bread roll
Peperonata: capsicums in tomato base and beef stock +bread roll
Bolognese sauce: mince meat, herbs, vegetables, tomato concentrate, butter, olive oil, beef stock, peeled tomatoes and "secret" ingredient
Tiramisu': classic Italian dessert(NO CREAM) with mascarpone, eggs, sugar, cacao, savoiardi biscuits, espresso coffee
